Oatmeal Cookie Recipe

  • 1 package yellow cake mix
  • 2 cups quick-cooking oats
  • 1 cup sugar
  • 1 cup vegetable oil
  • 2 eggs
  • 1 cup chopped pecans
  • 1 1/2 teaspoons vanilla

Heat oven to 350º. Mix cake mix (dry), oats and sugar in large bowl with spoon. Mix oil and eggs; stir into oat mixture thoroughly. Stir in pecans and vanilla.

Drop dough by rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheet. Bake about 12 minutes or until light brown. Remove from cookie sheet to wire rack.

Chocolate-Oatmeal Chewies

  • 1 1/2 cups sugar
  • 1 cup butter or margarine — softened
  • 1/4 cup milk
  • 1 egg
  • 2 2/3 cups quick-cooking or old-fashioned oats
  • 1 cup all-purpose flour
  • 1/2 cup baking cocoa
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda

Heat oven to 350º. Beat sugar, butter, milk and egg in large bowl with electric mixer on medium speed, or mix with spoon. Stir in remaining ingredients.

Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet. Bake 10 to 12 minutes or until almost no indentation remains when touched in center. Cool 1 to 2 minutes; remove from cookie sheet to wire rack.

  • 2/3 cup granulated sugar
  • 2/3 cup packed brown sugar
  • 1/2 cup butter or margarine — softened
  • 1/2 cup unsweetened applesauce
  • 1/2 cup fat-free, cholesterol-free egg product OR 2 eggs
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons vanilla
  • 3 cups quick-cooking or old-fashioned oats
  • 1 cup all-purpose flour
  • 2/3 cup raisins

Preparation:
Heat oven to 375º. Mix all ingredients except oats, flour and raisins in large bowl with spoon. Stir in oats, flour and raisins.

Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet. Bake 9 to 11 minutes or until light brown. Immediately remove from cookie sheet to wire rack.

Toasted Oatmeal Cookies Ingredients:

  • 2 1/2 cups quick-cooking or old-fashioned oats
  • 1 cup chopped walnuts
  • 1 1/2 cups packed brown sugar
  • 1 cup butter or margarine — softened
  • 1 teaspoon vanilla
  • 1 egg
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Preparation:
Heat oven to 350º. Spread oats and walnuts in ungreased jelly roll pan, 15 1/2 × 10 1/2 × 1 inch. Bake 15 to 20 minutes, stirring occasionally, until light brown; cool.
